3 extra-large eggs
1 cup (150g) flour
11/5 cups (300ml) milk
Pinch salt
¾ cup (180ml) Westfalia Plain Avocado Oil


  1. Preheat oven to highest setting.
  2. Whisk eggs, flour, milk and salt together in a bowl. Pour into a jug and leave to sit for 30 minutes before using.
  3. Place a 12-cup muffin tray in the oven for 5 minutes.
  4. Pour 1 Tbspoil into each muffin cup and return to the oven for another 5 minutes before dividing batter equally between cups.
  5. Bake for 15–20 minutes without opening the oven door or until cooked through, puffed and golden.
