Chocolate Puddings with Vanilla Yoghurt

Serves: 1 – 2


½ cup (125ml) Westfalia Chilli Flavoured Avocado Oil
2 slabs (200g) dark chocolate
2 jumbo eggs
2 jumbo egg yolks
2 tsp (10ml) vanilla essence
½ cup (125g) sugar
¼ cup (60g) flour
1 cup (250ml) vanilla yoghurt, to serve


  1. Preheat oven to 180°C. Grease 6 small ramekins.
  2. Melt together oil and chocolate. Set aside to cool slightly.
  3. Beat eggs, yolks and vanilla with sugar until pale. Fold through melted chocolate mixture. Fold through flour.
  4. Divide mixture between ramekins and bake for 15-20 minutes until cooked but still soft in the centre. Serve warm with vanilla yoghurt.
