BABY MARROW, PEA AND PRAWN LINGUINI

INGREDIENTS:

¼ cup (60ml) Westfalia Lemon Flavoured Avocado Oil
2-3 cloves garlic, crushed
1 cup (250ml) fresh or frozen peas, blanched
1 cup (250ml) sliced baby marrows, blanched
1-2 cups (250-500ml) cooked prawn tails
Juice and grated peel of 1 lemon
¾ packet linguini, cooked according to packet instructions.
¼ cup (60ml) chopped parsley
Salt and milled pepper
Parmesan cheese to serve

Method:

  1. Heat oilin a pan and fry garlic for a minute.
  2. Add vegetables, prawns and lemon juice. Heat through.
  3. Toss in pasta and parsley, and mix well.
  4. Season and serve with parmesan.
