BACON AND GUACAMOLE OPEN SANDWICH

INGREDIENTS:

1 packet (250g) back bacon
1 Tbsp (15ml) Westfalia Plain Avocado Oil
2 corn cobs
1 tub (200g) Westfalia Spicy Guacamole
8 slices bread
1 cos lettuce
2 ripe tomatoes, sliced
Salt and milled pepper

Method:

  1. Preheat oven grill. Grill bacon until crispy. Set aside.
  2. Rub corn with oil and grill until slightly charred on all sides. Allow to cool,then slice corn from cobs.
  3. Spread guacamole onto bread slices.
  4. Layer lettuce, tomato and bacon on top.
  5. Scatter over corn. Season and serve.
