Beef Teriyaki

Serves 4

INGREDIENTS:

  • 300g beef strips
  • 2 Tbsp (30ml) soy sauce
  • 2 Tbsp (30ml) rice wine
  • 1-2 garlic cloves, crushed
  • 1 packet (250g) egg noodles
  • 3 Tbsp (45ml) Westfalia Avocado Oil Plain-flavoured infusion
  • 6 spring onions, chopped
  • 400g julienne stir-fry vegetables
  • ½ cup (125ml) teriyaki sauce
  • 2 tsp (10ml) grated ginger
  • Juice (30ml) of 2 limes
  • 2 Tbsp (30ml) sesame seeds
  • ¼ cup (60ml) chopped coriander

Method:

  1. Marinate beef in soy sauce, rice wine and garlic for 10 minutes.
  2. Cook noodles according to packet instructions, drain and set aside
  3. Heat avocado oil in a deep pan or wok and stir-fry beef strips to seal. Set aside.
  4. Stir-fry spring onions and vegetables for a few minutes.
  5. Add teriyaki sauce, ginger, beef and noodles and toss to combine.
  6. Serve scattered with sesame seeds and coriander.
