Feta and Chilli Burger


  • 2 medium brinjals

  • 2 tsp (10ml) curry powder

  • ½ cup (125ml) flour

  • 2 extra-large eggs, whisked

  • 2 cups (500ml) fresh breadcrumbs
  • 1 head butter lettuce

  • 2 tomatoes, sliced

  • ¼ cup (60ml) crumbled feta

  • ¼ cup (60ml) mint leaves

  • 4-6 fresh burger rolls

  • 1 tub (200g) Westfalia Spicy or Plain Guacamole


  1. Toss brinjals with curry powder, dust in flour then coat in egg and breadcrumbs .
  2. Shallow fry in avocado oil, turning once, until golden. Drain on kitchen paper. (Brinjal cooks quickly so these can be made last minute.)
  3. Assemble burgers by dividing ingredients between rolls and topping with Westfalia Guacamole.
