Grilled Basil and Feta Stuffed Chicken Breast

Serves: 1 – 2


4 free-range chicken breast fillets
1 packet (30g) basil, chopped
2 discs feta cheese, crumbled
2 Tbsp (30ml) Westfalia Basil Flavoured Avocado Oil, plus extra to drizzle
1 Tbsp (15ml) lemon zest
2 cloves garlic, chopped
Salt and milled pepper
Rocket leaves to serve


  1. Preheat oven grill.
  2. Slice a pocket into the back of each chicken breast.
  3. Mix together basil, feta, oil, zest and garlic. Season.
  4. Stuff breasts with mixture. Secure with a toothpick.
  5. Place stuffed breasts onto a greased baking tray.
  6. Drizzle with oil and grill for 20-25 minutes, turning half way, until golden and cooked through.
  7. Serve with salad.
