Honey-Mustard baked chicken

Serves 4

INGREDIENTS:

  • Juice (about 125ml) and grated peel of 2 lemons
  • 2 Tbsp (30ml) chopped thyme
  • ¼ cup (60ml) honey
  • 3 Tbsp (45ml) whole-grain mustard
  • 3 Tbsp (45ml) Westfalia Avocado Oil lemon-flavoured infusion
  • Salt and milled pepper
  • 8 chicken pieces

Method:

  1. Preheat oven to 180ºC.
  2. Whisk lemon juice and peel, thyme, honey, mustard, avocado oil and seasoning together.
  3. Toss through chicken and roast for 30-40 minutes or until cooked through and crispy.
