Sausages with Peppers and Garlic Mash

Serves: 1 – 2


8-12 lean pork sausages
2 peppers, seeded andthickly sliced
1 onion, sliced
1 punnet (250g) cherry tomatoes
2 Tbsp (30ml) Westfalia Garlic Flavoured Avocado Oil
Salt and milled pepper

Garlic Mash:

6 potatoes, peeled
1/3 – ½ cup (80-125ml) milk
2 Tbsp (30ml) Westfalia Garlic Flavoured Avocado Oil


  1. Preheat oven to 190°C.
  2. Toss sausages, peppers, onion, tomatoes and oil in a large roasting tin. Season.
  3. Roast for 20-25 minutes or until sausages and vegetables are cooked through.
Garlic mash:
  1. Boil potatoes until tender. Drain and set aside.
  2. Add milk and oil, and mash. Season.
  3. Serve with sausage bake.
