SPICY CHICKEN AND PEPPER TACOS

INGREDIENTS:

3 Tbsp (45ml) Westfalia Chilli Flavoured Avocado Oil
1 onion, chopped
1 tsp (5ml) dried chilli flakes
1 Tbsp (15ml) ground cumin
2 tsp (10ml) ground coriander
4 chicken breast fillets, sliced
2 peppers, seeds removed and sliced
1 can (410g) chopped tomatoes
½ tsp (3ml) sugar 8-12 tacos
1 tub (200g) Westfalia Spicy Guacamole
Plain yoghurt, to serve
Fresh coriander, to serve

Method:

  1. Heat oil in a large saucepan and sauté onion, chilli flakes, cumin and coriander until soft.
  2. Add chicken and peppers and fry for 1 minute. Add tomatoes and sugar and simmer until cooked through.
  3. Serve spooned into tacos and topped with guacamole, a dash of yoghurt and chopped coriander.
