SPICY FISH BURGERS WITH GUACAMOLE

INGREDIENTS:

4 fresh hake fillets (150-200g each), roughly minced
½ bunch spring onions, chopped
¼ cup (60ml) chopped coriander, plus extra to serve
2 Tbsp (30ml) Westfalia Chilli Flavoured Avocado Oil
1 tsp (5ml) Westfalia Garlic Flavoured Avocado Oil, plus extra for frying
1 egg, beaten
3 Tbsp (45ml) flour, plus extra to dust
Salt and milled pepper
1 tub (200g) Westfalia Spicy Guacamole

Method:

  • Salad leaves
  • Sliced tomato
  • Burger buns
  • 1 tub (200g) Westfalia Guacamole
  1. Combine burger ingredients in a large bowl. Season well.
  2. Divide mixture into four patties and dust with flour.
  3. Heat a glug of oil in a pan. Fry burgers until golden and cooked through.
  4. Serve on buns, with salad leaves, tomato and a generous dollop of guacamole.
