Cheesy baked spud boats

Westfalia guacamole_tub_plain


  • 4 large baking potatoes
  • 1 can (410g) sweetcorn kernels
  • 1 cup (250ml) grated cheddar cheese
  • ¼ cup (60ml) chopped parsley
  • 3 Tbsp (45ml) Westfalia Chilli Flavoured Avocado Oil
  • Salt and milled pepper
  • 1 tub (200g) Westfalia Plain Guacamole


  1. Preheat oven to 200°C
  2. Bake potatoes until tender, about 30-40 minutes.
  3. Halve potatoes lengthways and carefully scoop out flesh, leaving skins intact.
  4. Mix potato filling, sweetcorn, grated cheese, parsley and oil together, and season.
  5. Spoon filling back into skins and bake for 20 minutes or until golden.
  6. Serve with Westfalia Plain Guacamole.
