Corn fritters with guacamole


  • 2 extra-large eggs
  • 4/5 cup (200ml) self-raising flour
  • ½ tsp (3ml) dried chilli flakes
  • 2 cans (410g each) corn kernels, drained
  • 1½ red onions, chopped
  • 1/3 cup (80ml) chopped coriander
  • ¼ cup (60ml) Westfalia Garlic Flavoured Avocado Oil
  • 1-2 tomatoes, diced
  • ½ cup (125ml) cucumber, finely diced
  • 1 tub (200g) Westfalia Spicy Guacamole

  1. Lightly whisk eggs. Sift flour, add chilli and fold through eggs to form a thick batter.
  2. Add drained kernels, 1 finely chopped onion and ¼ cup (60ml) coriander. Season and mix well.
  3. Heat 3 Tbsp (45ml) oil in a non-stick pan and fry dollops of batter until cooked through.
  4. Mix remaining onion, coriander, tomatoes, cucumber and a dash of oil together.
  5. Serve fritters topped with tomato salsa and a generous dollop of Westfalia Spicy Guacamole.
