French Onion Tarts

Serves: 1 – 2


¼ cup (60ml) Westfalia Garlic Flavoured Avocado Oil
5 large onions, thinly sliced
½ cup (125ml) fresh thyme
1 roll (500g) puff pastry
1 egg, beaten
12 pitted black olives
12 anchovy fillets


  1. Preheat oven to 200°C.
  2. Heat oil in a large frying pan. Fry onions and thyme over medium heat for 30 minutes until soft and dark golden in colour.
  3. Season and set aside to cool.
  4. Cut pastry into 6 squares. Use a small knife to score a 1cm border around the edge of each pastry piece. Brush edges with beaten egg.
  5. Spread onions evenly over each square (keeping within border). Arrange olives and anchovies on top. Bake for 15 minutes at 200°C.
  6. Reduce temperature to 180°C and bake for a further 10-15 minutes until pastry is puffed and golden. Serve hot or cold.
