MUSSELS IN WHITE WINE, CHERRY TOMATOES AND BASIL OIL

INGREDIENTS:

Westfalia Basil Flavoured Avocado Oil
1 onion, thinly sliced
2-3 cloves garlic, crushed
½ small chilli, chopped
1 punnet (250g) mixed cherry tomatoes, halved
1kg fresh black mussels, beards removed
1½ cups (375ml) white wine
Handful fresh basil, torn
Salt and milled pepper

Method:

  1. Heat a glug of oil in a large saucepan.
  2. Add onions, garlic and chilli. Fry until soft.
  3. Add tomatoes, mussels and wine. Cover, bring to the boil and cook for 5-10 minutes until all mussels have opened.
  4. Toss through basil and season.
  5. Serve with crusty bread.
