SPROUTED CHICKPEA HUMMUS

INGREDIENTS:

1-2 garlic cloves, crushed
2 tsp (10ml) ground cumin
Juice (60ml) of 1 lemon
¼ cup (60ml) tahini paste
1 packet (150g) chickpea sprouts
1 can (410g) chickpeas, drained
1/3 cup (80ml) Westfalia Basil Flavoured Avocado Oil, plus extra for drizzling
2 Tbsp (30ml) water
Salt and milled pepper
Pinch smoked paprika
1 Tbsp (15ml) sesame seeds

Method:

  1. Blitz garlic, cumin, lemon juice, tahini paste, chickpea sprouts, drained chickpeas and oil for a few minutes until almost smooth.
  2. Add water and seasoning, and pulse for another minute.
  3. Serve with a drizzle of avocado oil and sprinkle with paprika and sesame seeds.
  4. Serve with vegetable crudités, fresh bread, cold meat and cheese. Also ideal as a sandwich filler.
